One Pot Sausage Peppers & Onions Pasta

A quick and easy delicious dinner all cooked in one pot. Classic sausage, peppers and onions tossed with rigatoni and marinara sauce.

In a pot on medium heat, add oil and brown the sausage for 3 minutes on each side. Set aside.

Add peppers and onions and sauté for 5 minutes. Toss in the garlic and sauté for a minute more.

Slice the sausage into 1 inch pieces.

Add sausage, pasta, water, crushed tomatoes, and seasonings into the pot.

Mix until combined, cover, and bring to a boil. Cook until the pasta is al dente. Check for doneness around 15 minutes and add 1/4 cup more water if needed and continue cooking. Stir the pasta occasionally to prevent the pasta from sticking to the bottom of the pan.

Serve with pecorino romano cheese, fresh oregano, and basil.
