Creamy Tortellini Soup with Sausage and Spinach

- 1 pound spicy Italian Sausage or mild, casings removed
- ½ cup yellow onion diced
- 3 cloves garlic minced
- ¼ cup flour
- 1 cup carrots diced
- 28 ounces crushed tomatoes
- 1 tablespoon Italian seasoning
- 4 cups chicken broth
- 16 ounces cheese tortellini refrigerated or frozen
- 8 ounces flat leaf spinach
- ⅓ cup heavy cream
- salt and pepper to taste
Optional Toppings
- fresh basil or parsley chopped
- parmesan cheese grated
- red pepper flakes crushed
In a large pot, brown and crumble the sausage for about 5 minutes on medium heat.
Add in onion and garlic and sauté for 2 minutes until fragrant.
Mix in flour and cook for 1 minute.
Add in carrots, crushed tomatoes, Italian seasoning, and chicken broth. Bring to a boil then reduce to a simmer for 10 minutes. Stir occasionally.
Add in tortellini and cook for 5-8 minutes until tender.
Turn off the heat and stir in spinach, heavy cream, and salt and pepper. The residual heat will wilt the spinach. Serve with optional toppings.
