Creamy Tortellini Soup with Sausage and Spinach

There's nothing like a hot bowl of creamy tortellini soup filled with sausage and vegetables. This ultra comforting soup is so easy to make!

Ingredients
  

  • 1 pound spicy Italian Sausage or mild, casings removed
  • ½ cup yellow onion diced
  • 3 cloves garlic minced
  • ¼ cup flour
  • 1 cup carrots diced
  • 28 ounces crushed tomatoes
  • 1 tablespoon Italian seasoning
  • 4 cups chicken broth
  • 16 ounces cheese tortellini refrigerated or frozen
  • 8 ounces flat leaf spinach
  • cup heavy cream
  • salt and pepper to taste

Optional Toppings

  • fresh basil or parsley chopped
  • parmesan cheese grated
  • red pepper flakes crushed

Instructions
 

  • In a large pot, brown and crumble the sausage for about 5 minutes on medium heat.
  • Add in onion and garlic and sauté for 2 minutes until fragrant.
  • Mix in flour and cook for 1 minute.
  • Add in carrots, crushed tomatoes, Italian seasoning, and chicken broth. Bring to a boil then reduce to a simmer for 10 minutes. Stir occasionally.
  • Add in tortellini and cook for 5-8 minutes until tender.
  • Turn off the heat and stir in spinach, heavy cream, and salt and pepper. The residual heat will wilt the spinach. Serve with optional toppings.
