Make the wonton filling: In a bowl, mix ground pork, soy sauce, scallions, white pepper, Shaoxing wine.
Wrap the wontons by placing one wonton wrapper in your hand. Place 1-2 teaspoons of filling into the center of the wrapper. Fold the wrapper starting from the left bottom corner over the filling. Then fold again. Using your finger or a butter knife, moisten the left corner of the wrapper and fold with the other corner, pinch to seal. Repeat with the rest of the filling.
Cook the wontons: Bring a pot of water to a boil and add wontons. Cook for 5 minutes, gently move the wontons around 1-2 times to make sure they don't stick.
Simmer the broth: In a pot, bring chicken broth, soy sauce, white pepper and Shaoxing wine to a simmer. Drain the wontons and add to the broth. Top with scallions. Happy nomming!

The broth recipe is for about four servings. Serve with as many wontons as you'd like.
