Ingredients
  

Wonton Filling

  • 1 lb ground pork
  • ¼ cup soy sauce
  • ¼ cup scallions thinly sliced
  • ¼ teaspoon white pepper
  • 1 tablespoon shaoxing wine
  • 16 oz wonton wrappers

Broth

  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon shaoxing wine
  • white pepper to taste
  • ¼ cup scallions thinly sliced

Instructions
 

  • Make the wonton filling: In a bowl, mix ground pork, soy sauce, scallions, white pepper, Shaoxing wine.
  • Wrap the wontons by placing one wonton wrapper in your hand. Place 1-2 teaspoons of filling into the center of the wrapper. Fold the wrapper starting from the left bottom corner over the filling. Then fold again. Using your finger or a butter knife, moisten the left corner of the wrapper and fold with the other corner, pinch to seal. Repeat with the rest of the filling.
  • Cook the wontons: Bring a pot of water to a boil and add wontons. Cook for 5 minutes, gently move the wontons around 1-2 times to make sure they don't stick.
  • Simmer the broth: In a pot, bring chicken broth, soy sauce, white pepper and Shaoxing wine to a simmer. Drain the wontons and add to the broth. Top with scallions. Happy nomming!

Notes

  • The broth recipe is for about four servings. Serve with as many wontons as you'd like.
  • This recipe makes about 40-50 wontons.
