Creamy cheesy raclette with prosciutto, gherkins, scallions, and dijon mustard wrapped around a crispy baguette.

- 2 baguettes  6 inches
- 4 slices prosciutto
- 4 gherkins sliced
- 2 teaspoons dijon mustard
- 2 teaspoons scallions sliced
- 4 ounces raclette cheese sliced
- Slice the baguettes in half lengthwise and toast. 
- Layer on prosciutto, gherkins, dijon mustard, and scallions. 
- In a small skillet on medium low heat, melt the raclette cheese. Stir occasionally to melt evenly.  
- Pour the raclette cheese onto the sandwich and serve immediately.  
- Fresh baguette is a must. Use the baguette the same day or the next day since they get stale quickly.
- If your baguette is stale, run it under tap water for a few seconds and bake at 350°F for 10 minutes.
