Air Fryer Acorn Squash

Air fryer acorn squash coated with a maple butter cinnamon glaze and topped with pecans. A simple and delicious fall side dish.

- 1 acorn squash about 2 pounds
- 1 teaspoon canola oil
- 2 tablespoons butter melted
- 1 tablespoon brown sugar
- 2 tablespoons maple syrup
- ¼ teaspoon cinnamon
- pinch of salt
- 1 tablespoon pecans chopped
Slice the acorn squash in half lengthwise and scoop out the seeds and pulp.
Place the acorn squash cut side down and slice into ½ inch thick pieces.
Toss with canola oil and air fry at 400°F for 15 minutes, flipping halfway through.
In a small bowl, combine melted butter, brown sugar, maple syrup, cinnamon, and salt.
Place the acorn squash in a mixing bowl and coat with the maple cinnamon glaze.
- Work in batches depending on the size of your air fryer. I have a 4 quart air fryer and did two batches.
- Use a sharp knife and be careful when slicing as the acorn squash has a thick skin.
