Air fryer acorn squash coated with a maple butter cinnamon glaze and topped with pecans. A simple and delicious fall side dish.

Ingredients
  

  • 1 acorn squash about 2 pounds
  • 1 teaspoon canola oil
  • 2 tablespoons butter melted
  • 1 tablespoon brown sugar
  • 2 tablespoons maple syrup
  • ¼ teaspoon cinnamon
  • pinch of salt
  • 1 tablespoon pecans chopped

Instructions
 

  • Slice the acorn squash in half lengthwise and scoop out the seeds and pulp.
  • Place the acorn squash cut side down and slice into ½ inch thick pieces.
  • Toss with canola oil and air fry at 400°F for 15 minutes, flipping halfway through.
  • In a small bowl, combine melted butter, brown sugar, maple syrup, cinnamon, and salt.
  • Place the acorn squash in a mixing bowl and coat with the maple cinnamon glaze.

Notes

  • Work in batches depending on the size of your air fryer. I have a 4 quart air fryer and did two batches.
  • Use a sharp knife and be careful when slicing as the acorn squash has a thick skin.
