Kielbasa Cajun Fried Rice

Ingredients
  

  • 1 tablespon butter
  • 2 eggs
  • 1 tablepoon canola oil
  • 14 ounces keilbasa sliced
  • 1 cup onion diced
  • ½ cup red bell pepper diced
  • ½ cup green bell pepper diced
  • 2 cloves garlic minced
  • 4 cups cooked long grain white rice previously chilled
  • 1 tablespoon cajun seasoning
  • salt and pepper to taste
  • 2 tablespoons scallion thinly sliced

Instructions
 

  • In a large skillet on medium heat, melt the butter. In a bowl, whisk the eggs then coook for 2 minutes until just cooked and scrambled. Transfer the eggs onto a plate and set aside.
  • In the same pan on medium high heat, add oil and stir fry the kielbasa, onion, and bell peppers for 5 minutes.
  • Add in the egg, garlic, white rice, cajun seasoning, salt, and pepper and stir fry until the rice is heated through. Garnish with scallions.

Notes

  • Prep all your ingredients. Fried rice is quickly cooked on high heat. Prep all your ingredients ahead of time to make the process smoother.
  • Use your favorite vegetables. Fried rice is a great clean-out-the-fridge meal. Spinach, cabbage, mushrooms, green beans, corn, or broccoli all work well!
