Instructions
Preheat the oven to 400°F.
Place the salmon filets on a baking sheet lined with parchment paper. Make slits in the center of the salmon filets ⅔s of the way vertically.
Coat the salmon with dijon mustard and everything bagel seasoning.
In a small bowl, mix the cream cheese with scallions, salt and pepper.
Stuff the salmon with the cream cheese mixture and bake for 8-10 minutes or until desired doneness.
Notes
Salt levels in everything bagel seasoning varies. Adjust accordingly and to your taste.
Don't overcook the salmon! According to the FDA, salmon is cooked at 145°F. However, I personally like my salmon medium rare 125-130°F or medium 135-140°F. This creates a flaky salmon that is still moist and tender.
Adjust the cooking time based on the thickness of the salmon.
Make only enough for what you can eat immediately. I don't recommend reheating salmon as it tends to dry it out.
