Everything Bagel Salmon Stuffed with Scallion Cream Cheese

Ingredients
  

  • 2 salmon filets 6 ounces each
  • 1 tablespoon dijon mustard
  • 2 teaspoons everything bagel seasoning see note
  • 2 tablespoons cream cheese
  • 2 tablespoons scallions white and green parts thinly sliced
  • salt and pepper to taste
  • 1 lemon sliced into wedges

Instructions
 

  • Preheat the oven to 400°F.
  • Place the salmon filets on a baking sheet lined with parchment paper. Make slits in the center of the salmon filets ⅔s of the way vertically.
  • Coat the salmon with dijon mustard and everything bagel seasoning.
  • In a small bowl, mix the cream cheese with scallions, salt and pepper.
  • Stuff the salmon with the cream cheese mixture and bake for 8-10 minutes or until desired doneness.

Notes

  • Salt levels in everything bagel seasoning varies. Adjust accordingly and to your taste.
  • Don't overcook the salmon! According to the FDA, salmon is cooked at 145°F. However, I personally like my salmon medium rare 125-130°F or medium 135-140°F. This creates a flaky salmon that is still moist and tender.
  • Adjust the cooking time based on the thickness of the salmon.
  • Make only enough for what you can eat immediately. I don't recommend reheating salmon as it tends to dry it out.
