Sausage egg and cheese breakfast burritos are the perfect on the go breakfast! Made with sausage, peppers, onions, fluffy scrambled eggs and melty cheese wrapped in warm tortillas.

Ingredients
  

  • 1 lb breakfast sausage
  • 1 cup mixed bell peppers diced
  • ½ cup onion diced
  • 2 eggs

Seasonings

  • 1 teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ tsp oregano
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • salt & pepper to taste

To Assemble

  • 8 flour tortillas 8 inch
  • 1 cup cheddar cheese shredded
  • Optional: Salsa, hot sauce or taco sauce

Instructions
 

  • In a large skillet on medium high heat, brown the sausage for 5 minutes and crumble into small pieces.
  • Add peppers and onions and sauté for 5 more minutes.
  • Whisk egg with 1 tb of water. Move the sausage mixture to one side of the pan then add the eggs. Scramble and cook the eggs then toss with the sausage, peppers and onions.
  • Add seasonings, ¼ cup of water and cook for 1-2 minutes.
  • Assemble the burritos by layering cheese, sausage mixture and desired toppings. Happy nomming!
