Ingredients
  

  • 1 tablespoon canola oil
  • 4 chicken thighs bone in skin on
  • ½ inch ginger sliced
  • 2 cloves garlic chopped
  • 1 star anise optional
  • 1 cinnamon stick
  • 1 can coca cola
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 tablespoons shaoxing wine
  • salt to taste
  • 1 teaspoon scallions optional
  • ½ teaspoon sesame seeds optional

Instructions
 

  • In a skillet on medium high heat, add oil and sear the chicken until browned on both sides. Set aside and drain out excess fat, reserving 1 tablespoon in the pan.
  • Add in ginger, garlic, star anise, cinnamon and sauté until fragrant, about 30 seconds.
  • Add in coca cola, soy sauce, dark soy sauce, and shaoxing wine, and then add the chicken back in.
  • Bring the sauce to a boil then reduce to a simmer. Cook uncovered for 20-30 minutes or until the sauce is thickened. Flip the chicken halfway through cooking.
  • Skim off any excess fat and season with salt to taste. Garnish with scallions and sesame seeds.
