Smashburger inspired rosemary garlic fries with olive oil. Super fragrant and double fried for ultimate crispiness. The perfect side to a juicy burger or as an appetizer.

oil for frying 2 medium russet potatoes cut into matchsticks ½ teaspoon fresh rosemary chopped 2 cloves garlic minced 1 teaspoon olive oil salt to taste
In a large skillet, heat 1 inch of oil to 375°F.
Working in batches, fry the potatoes for 5 minutes, flipping halfway through, then drain on a wire rack.
To double fry, heat the oil to 400°F and fry for 2-3 more minutes until golden brown. Drain the fries on a wire rack.
In a large mixing bowl, combine rosemary, garlic, olive oil, and salt. Toss the fries into the seasonings and serve immediately.
