- 1 pound spicy Italian Sausage or mild, casings removed
- ½ cup yellow onion diced
- 3 cloves garlic minced
- ¼ cup flour
- 1 cup carrots diced
- 28 ounces crushed tomatoes
- 1 tablespoon Italian seasoning
- 4 cups chicken broth
- 16 ounces cheese tortellini refrigerated or frozen
- 8 ounces flat leaf spinach
- ⅓ cup heavy cream
- salt and pepper to taste
