Ingredients
  

  • 2 cups watermelon cubed
  • 1 cup cucumber sliced or julienned
  • ¼ red onion thinly sliced
  • ½ avocado diced
  • ¼ cup feta cheese crumbled

Lemon Mint Dressing

  • 1 tablespoon lemon juice
  • 2 tablespoon olive oil
  • 1 teaspoon honey
  • ½ teaspoon dijon mustard
  • 1 tablespoon mint leaves chopped
  • ½ lemon zested
  • salt and pepper to taste

Instructions
 

  • Combine the ingredients for the dressing and set aside.
  • Place the salad ingredients in a large bowl and toss in the dressing. Serve immediately. Happy nomming!

Notes

  • This recipe can be made ahead of time. Toss in the dressing just before serving.
