    Refreshing cucumber watermelon salad with feta cheese and avocado in a lemon mint dressing. The perfect summer side dish full of flavors and textures: crunchy, juicy, sweet, and salty.

    For the watermelon: pick the sweetest one you can find since it's the star of the show!

    I julienned the cucumber into long pieces for a funky twist but feel free to just chop or spiralize it.

    How to Make Watermelon Salad

    1. Combine the ingredients for the dressing and set aside.
    2. Place the salad ingredients in a large bowl and pour in the dressing. Toss lightly and serve with extra feta cheese on top.

    Ingredients
      

    • 2 cups watermelon cubed
    • 1 cup cucumber sliced or julienned
    • 1/4 red onion thinly sliced
    • 1/2 avocado diced
    • 1/4 cup feta cheese crumbled

    Lemon Mint Dressing

    • 1 tbsp lemon juice
    • 2 tbsp olive oil
    • 1 tsp honey
    • 1/2 tsp dijon mustard
    • 1 tbsp mint leaves chopped
    • 1/2 lemon zested
    • salt and pepper to taste

    Instructions
     

    • Combine the ingredients for the dressing and set aside.
