Ingredients
  

  • 14 ounces smoked sausage 1 inch slices
  • 2 cups butternut squash cubed
  • 2 medium potatoes cubed
  • 2 cups broccoli florets

Seasonings

  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 tablespoon dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F. Line a 9x13" sheet pan with parchment paper and add in sausage, butternut squash, potatoes, and broccoli.
  • Mix the oil, garlic, dijon mustard, paprika, onion powder, red pepper flakes, and salt and pepper in a bowl.
  • Distribute the seasoning evenly among the vegetables and toss to coat.
  • Roast for 15 minutes then toss and bake for another 15-20 minutes until the vegetables are cooked through.

Notes

  • Flip everything halfway through roasting for even cooking and browning.
  • Chop the vegetables about the same size for even cooking. I did half inch cubes.
  • Use your favorite sausage and vegetables. This recipe is versatile!
