Sheet Pan Sausage and Veggies

The easiest sheet pan dinner loaded with smoked sausage and tons of vegetables. Full of flavor and a spicy kick.

- 14 ounces smoked sausage 1 inch slices
- 2 cups butternut squash cubed
- 2 medium potatoes cubed
- 2 cups broccoli florets
Seasonings
- 2 tablespoons vegetable oil
- 3 cloves garlic minced
- 1 tablespoon dijon mustard
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon red pepper flakes
- salt and pepper to taste
Preheat the oven to 400°F. Line a 9x13" sheet pan with parchment paper and add in sausage, butternut squash, potatoes, and broccoli.
Mix the oil, garlic, dijon mustard, paprika, onion powder, red pepper flakes, and salt and pepper in a bowl.
Distribute the seasoning evenly among the vegetables and toss to coat.
Roast for 15 minutes then toss and bake for another 15-20 minutes until the vegetables are cooked through.
- Flip everything halfway through roasting for even cooking and browning.
- Chop the vegetables about the same size for even cooking. I did half inch cubes.
- Use your favorite sausage and vegetables. This recipe is versatile!
