Savory fried rice loaded with smoked sausage, vegetables, and fluffy eggs. The cajun seasoning takes this fried rice to the next level. A delicious and quick dinner in 20 minutes!
4cupscooked long grain white ricepreviously chilled
1tablespooncajun seasoning
salt and pepperto taste
2tablespoonsscallionthinly sliced
Instructions
In a large skillet on medium heat, melt the butter. In a bowl, whisk the eggs then coook for 2 minutes until just cooked and scrambled. Transfer the eggs onto a plate and set aside.
In the same pan on medium high heat, add oil and stir fry the kielbasa, onion, and bell peppers for 5 minutes.
Add in the egg, garlic, white rice, cajun seasoning, salt, and pepper and stir fry until the rice is heated through. Garnish with scallions.

Prep all your ingredients. Fried rice is quickly cooked on high heat. Prep all your ingredients ahead of time to make the process smoother.
Use your favorite vegetables. Fried rice is a great clean-out-the-fridge meal. Spinach, cabbage, mushrooms, green beans, corn, or broccoli all work well!
