    Kielbasa Cajun Fried Rice

    Savory fried rice loaded with smoked sausage, vegetables, and fluffy eggs. The cajun seasoning takes this fried rice to the next level. A delicious and quick dinner in 20 minutes!

    The Inspiration

    Fried rice is one of my favorite things to cook because it's delicious, quick, easy, and is a great way to use up leftover ingredients in the fridge.

    This recipe is inspired by my popular creamy cajun salmon pasta and sheet pan sausage and veggies.

    I love the juiciness and smokiness of kielbasa and wanted to incorporate it into other dishes.

    The cajun seasoning in this fried rice makes it super unique and creates a flavorful combination with the smoked sausage and vegetables.

    Ingredients

    • Butter- oil can be used instead.
    • Eggs- a classic addition to any fried rice. Feel free to omit or use an egg substitute.
    • Kielbasa- I used smoked beef sausage. Use your favorite variety.
    • Onion- Yellow or red onion works.
    • Bell peppers- I like using a mix or red and green bell pepper for flavor and color. Feel free to use what you have on hand.
    • Garlic- 1/2 teaspoon garlic powder can be used in place of fresh.
    • White rice- chilled leftover rice is best as it's less sticky. I used long grain white rice, but jasmine or brown rice would be delicious as well.
    • Cajun seasoning- Use homemade or store bought Cajun seasoning. Keep the salt in the cajun seasoning in mind and adjust to your taste.
    • Scallions- the scallions add a sharpness to the dish to break up the savory-ness. You can use chives or even cilantro.

    How to Make Kielbasa Cajun Fried Rice

    1. In a large skillet, melt 1 tablespoon of butter on medium high heat.

    1. Add eggs and cook until scrambled about 2 minutes. Transfer the eggs onto a plate and set aside.
    1. In the same pan on medium heat, add oil and stir fry the kielbasa, onion, and bell peppers for 5 minutes.

    1. Toss in the garlic, rice, Cajun seasoning, salt, pepper, and egg and sauté until the rice is heated through. Garnish with scallions and enjoy!

    • Prep all your ingredients. Fried rice is quickly cooked on high heat. Prep all your ingredients ahead of time to make the process smoother.
    • Use your favorite vegetables. Fried rice is a great clean-out-the-fridge meal. Spinach, cabbage, mushrooms, green beans, corn, or broccoli all work well!

    Reheat in the microwave for 2-3 minutes until heated through or in a skillet with a splash of water.

    What type of rice should I use?

    I used long grain white rice but you can also use jasmine rice, brown rice, or even cauliflower rice! Avoid glutinous rice which is too sticky.

    Ingredients
      

    • 1 tablespon butter
    • 2 eggs
    • 1 tablepoon canola oil
    • 14 ounces keilbasa sliced
    • 1 cup onion diced
    • 1/2 cup red bell pepper diced
    • 1/2 cup green bell pepper diced
    • 2 cloves garlic minced
    • 4 cups cooked long grain white rice previously chilled
    • 1 tablespoon cajun seasoning
    • salt and pepper to taste
    • 2 tablespoons scallion thinly sliced

    Instructions
     

    • In a large skillet on medium heat, melt the butter. In a bowl, whisk the eggs then coook for 2 minutes until just cooked and scrambled. Transfer the eggs onto a plate and set aside.
    • In the same pan on medium high heat, add oil and stir fry the kielbasa, onion, and bell peppers for 5 minutes.
    • Add in the egg, garlic, white rice, cajun seasoning, salt, and pepper and stir fry until the rice is heated through. Garnish with scallions.
