Homemade Pork Breakfast Sausage Patties

Juicy pork breakfast sausage patties packed with flavor. This homemade version is made with pantry staple ingredients and tastes so much better than store bought breakfast sausage. It's super easy to make and can be cooked from frozen for a quick and hearty morning breakfast!

Ingredients
  

  • 1 pound ground pork
  • 1 teaspoon brown sugar packed
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon poultry seasoning
  • ½ teaspoon dried sage
  • ½ teaspoon dried thyme
  • ¼ teaspoon crushed red pepper flakes
  • 1 teasooon kosher salt
  • ½ teaspoon black pepper

Instructions
 

  • Mix all the ingredients together in a large bowl until well combined. Optional: Cover and refrigerate for 2 hours or overnight.
  • Form the sausage into nine patties.
  • Heat a nonstick skillet on medium heat and cook the sausage for 3-4 minutes on each side until browned and cooked through.

Notes

  • I used a ¼ cup measuring cup to portion out 9 patties. You can make them as big or as small as you'd like.
  • There is no need to add oil to the pan since the sausage will release its own fat.
  • Use ground chicken, turkey, or beef! Just make sure there is at least 20 % fat to keep it juicy and flavorful! You can even use a vegetarian alternative.
  • Let the flavors marry! These are delicious when cooked right away, but even better when the spices have had a chance to mingle with the pork for a few hours.
  • Experiment with your favorite spices and seasonings! Try fennel seeds, basil, or cloves.
  • Mix the sausage with your hands. I've found that this is the best way to ensure all the spices get distributed throughout the sausage. Wear cooking gloves so you don't have to touch the meat directly.
  • Form them into whatever shape you'd like! Make it fun for kids by forming the patties into fun shapes or crumble the sausage and use it in your favorite recipe like this crescent ring or frittata!
  • Make a large batch and freeze the sausage for easy and quick breakfasts! This recipe can easily be doubled or tripled and the patties can be cooked directly from frozen.
