The Inspiration
This recipe is inspired by a restaurant in Princeton, NJ called Blue Point Grill. Their pistachio and parmesan crusted trout intrigued me as I never thought of combining fish with nuts. I was pleasantly surprised and wanted to recreate this dish for everyday dinners.

I used salmon but this dish can be made with tilapia, trout, flounder or cod. Fresh or frozen fish both work.
How to Make Pistachio and Parmesan Crusted Salmon
- Preheat the oven to 400°F. Line a baking dish with parchment paper and place the salmon skin side down. Season with salt and pepper and spread on the dijon mustard.
- In a small bowl, combine pistachios, parmesan cheese, garlic and melted butter.
- Gently press the mixture on top of the salmon.
- Bake for 8-12 minutes depending on the thickness of your salmon. Broil if desired to brown the top. The salmon is cooked when the flesh is easily flaked with a fork.

- Crush the pistachios using a mortar and pestle, chop with a knife, or place in a sealed plastic bag and use a rolling pin.

- 1 tablespoon dijon mustard
- ¼ cup pistachios crushed
- ¼ cup parmesan cheese grated
- 1 clove garlic minced
- 1 tablespoon butter melted
- 1 lemon sliced
- parsley chopped, optional
Instructions
