Ingredients
- 6 eggs
- ½ cup half and half
- 1 medium russet potato diced
- 1 cup ham diced
- ½ cup cheddar cheese diced or shredded
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 scallion sliced
- 1 tablespoon butter
Instructions
- Preheat the oven to 350˚F.
- In a mixing bowl, whisk eggs and half and half together.
- Place the diced potatoes in a microwave safe bowl and cover it with a microwave safe plate. Microwave for two minutes or until the potatoes are tender.
- Stir in potato, ham, cheese, salt, black pepper, and scallions into the egg mixture.
- Grease an 8 inch oven safe skillet or baking dish with melted butter. Pour the frittata mixture in the pan and bake for 40 minutes or until the eggs are set.
