    Easy Ham, Cheese, and Potato Frittata

    This fluffy frittata stuffed with ham, cheese, and potato is super easy to make and feeds a crowd. It takes only 10 minutes of prep time, can be prepared in advance, and is freezer friendly! It's great for breakfast, brunch, lunch or even dinner!

    Ham, Cheese, and Potato Frittata Ingredients

    • Eggs- the star of the show.
    • Half and half- All heavy cream or milk will also work.
    • Potato- I used a russet potato, but white, Yukon gold, red, or even sweet potato will work.
    • Ham- Spam, cooked sausage, bacon, corned beef, or even leftover chicken would be delicious. Or make it vegetarian by adding cooked vegetables.
    • Cheddar cheese- or any cheese of your choice. Parmesan, Swiss, or gruyere would be delicious.
    • Salt and black pepper- keeping it simple.
    • Scallion- we're using both the green and white parts. You can substitute with chives, sautéed onions, shallots, or leeks.
    • Butter- for flavor and to grease the pan.

    How to Make a Easy Ham, Cheese, and Potato Frittata

    1. Cook the potatoes.
    2. Whisk eggs and half and half together.
    1. Stir in potato, ham, cheese, salt, black pepper, and scallions.
    2. Grease a cast iron skillet with butter, pour the egg mixture in the pan and bake.

    • Add in other vegetables like spinach, kale, cooked broccoli, peas, carrots, bell peppers, or onion.
    • Dice the cheese instead of shredding it for pockets of cheese in the frittata.
    • Use a 10 inch or larger skillet to reduce the cooking time. I like my frittata thick so I used an 8 inch skillet.

    Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Thaw the frozen frittata overnight in the fridge.

    Ingredients
      

    • 6 eggs
    • ½ cup half and half
    • 1 medium russet potato diced
    • 1 cup ham diced
    • ½ cup cheddar cheese diced or shredded
    • ¼ teaspoon kosher salt
    • ¼ teaspoon black pepper
    • 1 scallion sliced
    • 1 tablespoon butter

    Instructions
     

    • Preheat the oven to 350˚F.
    • In a mixing bowl, whisk eggs and half and half together.
    • Place the diced potatoes in a microwave safe bowl and cover it with a microwave safe plate. Microwave for two minutes or until the potatoes are tender.
    • Stir in potato, ham, cheese, salt, black pepper, and scallions into the egg mixture.
    • Grease an 8 inch oven safe skillet or baking dish with melted butter. Pour the frittata mixture in the pan and bake for 40 minutes or until the eggs are set.
