    Baked Pistachio and Parmesan Crusted Salmon

    Juicy salmon crusted with nutty pistachios, parmesan, garlic and dijon mustard. A simple dish loaded with flavor and ready in 15 minutes!

    The Inspiration

    This recipe is inspired by a restaurant in Princeton, NJ called Blue Point Grill. Their pistachio and parmesan crusted trout intrigued me as I never thought of combining fish with nuts. I was pleasantly surprised and wanted to recreate this dish for everyday dinners.

    Ingredients

    I used salmon but this dish can be made with tilapia, trout, flounder or cod. Fresh or frozen fish both work.

    How to Make Pistachio and Parmesan Crusted Salmon

    1. Preheat the oven to 400°F. Line a baking dish with parchment paper and place the salmon skin side down. Season with salt and pepper and spread on the dijon mustard.

    1. In a small bowl, combine pistachios, parmesan cheese, garlic and melted butter.
    1. Gently press the mixture on top of the salmon.

    1. Bake for 8-12 minutes depending on the thickness of your salmon. Broil if desired to brown the top. The salmon is cooked when the flesh is easily flaked with a fork.

    • Crush the pistachios using a mortar and pestle, chop with a knife, or place in a sealed plastic bag and use a rolling pin.
    • Serve with a squeeze of lemon for a refreshing touch.

    • 2 salmon portions 6 ounces each
    • salt and black pepper
    • 1 tablespoon dijon mustard
    • ¼ cup pistachios crushed
    • ¼ cup parmesan cheese grated
    • 1 clove garlic minced
    • 1 tablespoon butter melted
    • 1 lemon sliced
    • parsley chopped, optional
