    These zucchini pepperoni pizza bites are cooked in just 10 minutes! A cheesy and saucy snack or appetizer.

    The Inspiration

    We went to visit family over the summer and one of our friends made zucchini pizza bites.

    I wasn't expecting it to be so delicious, and I'm pretty sure I ate half the plate.

    This is a great recipe to make when you're craving pizza but want something semi healthy. You can serve this as a snack, appetizer, or lunch.

    You could also apply this concept to mushrooms, bell peppers, or eggplant.

    Ingredients for Zucchini Pepperoni Pizza Bites

    • Zucchini- a fresh zucchini works best.
    • Marinara sauce- or pizza sauce. I used a jarred sauce to make this recipe quick but you can also make homemade marinara sauce! Pesto would also be delicious!
    • Mozzarella cheese- you could also use a mix of mozzarella, provolone, and parmesan.
    • Pepperoni- I found mini pepperoni slices. Try topping with your favorite protein or veggie, just chop them into tiny pieces.

    How to Make Zucchini Pepperoni Pizza Bites

    1. Place the zucchini slices in a single layer on a baking sheet lined with parchment paper. Season with salt and pepper.
    2. Top with marinara sauce, cheese, and pepperoni.
    3. Bake at 400°F for 8-10 minutes.

    • Experiment with your favorite pizza toppings. The world is your oyster!
    • Slice the zucchini evenly for even cooking.
    • Cook the zucchini until tender crisp. This will allow the zucchini to hold it's shape and prevent it from getting soggy.
    • Leave the skin on the zucchini. It's full of nutrients and the skin will help hold the zucchini together.
