    One Pot Sausage Peppers and Onions Pasta

    A quick and easy delicious dinner all cooked in one pot. Classic sausage, peppers and onions tossed with rigatoni and marinara sauce.

    1. In a pot on medium heat, add oil and brown the sausage for 3 minutes on each side. Set aside.
    1. Add peppers and onions and sauté for 5 minutes. Toss in the garlic and sauté for a minute more.
    1. Slice the sausage into 1 inch pieces.
    1. Add sausage, pasta, water, crushed tomatoes, and seasonings into the pot.
    1. Mix until combined, cover, and bring to a boil. Cook until the pasta is al dente. Check for doneness around 15 minutes and add ¼ cup more water if needed and continue cooking. Stir the pasta occasionally to prevent the pasta from sticking to the bottom of the pan.
    1. Serve with pecorino romano cheese, fresh oregano, and basil.

    • 1 tablespoon oil
    • 1 lb hot Italian sausage
    • 2 bell peppers sliced into strips
    • 1 onion sliced
    • 2 garlic cloves minced
    • 8 oz rigatoni pasta
    • 28 oz crushed tomatoes
    • 1 teaspoon Italian seasoning
    • ¼ teaspoon red pepper flakes
    • salt and pepper to taste
    • 2 ¾ cup water
    • ¼ cup pecorino romano or parmesan cheese grated
    • fresh basil and oregano optional

    • In the same pot, sauté pepper and onions for 5 minutes. Add garlic and sauté for another minute.
    • Slice the sausage into 1 inch pieces and add to the pot along with pasta, crushed tomatoes, Italian seasoning, red pepper flakes, salt and pepper, and water. Mix until combined.
    • Cover and bring to a boil then cook until the pasta is al dente. Stir occasionally to prevent the pasta from sticking to the bottom of the pot. Check for doneness around 15 minutes. If the sauce is too thick, mix in ¼ cup more water until the pasta is cooked.
    • Serve with pecorino romano or parmesan cheese. Garnish with fresh basil and oregano if desired.

      This was so good! My husband had 4 servings and told me to make it every week! I only had mild Italian sausage in my freezer so I just added some extra red pepper flakes and it was awesome! Thanks for the recipe!
