- Preheat the oven to 400°F. Line a sheet pan with parchment paper then add the sausage and veggies. The parchment paper makes for an easy breezy clean up!
- Mix the seasonings in a bowl. It's going to look a little weird and the oil is not going to fully incorporate but just trust the process!
- Distribute the seasoning evenly on the vegetables and use your hands to coat.
- Roast for 15 minutes then toss and bake for another 15-20 minutes until the vegetables are cooked through. That's it!!! Enjoy this super easy dinner.

- Flip everything halfway through roasting for even cooking and browning.
- Chop the vegetables about the same size for even cooking. I did half inch cubes.
- Use your favorite sausage. I used smoked beef sausage but you can also use Italian sausage, kielbasa, or plant based alternatives.
- Use your favorite veggies. Acorn squash, carrots, brussels sprouts, zucchini, onions, asparagus, and bell peppers are all yummy. Use your favorites or what you have on hand. This recipe is versatile!
