    Air Fryer Acorn Squash

    Air fryer acorn squash coated with a maple butter cinnamon glaze and topped with pecans. A simple and delicious fall side dish.

    I received an air fryer for my bridal shower a couple years ago and have been having fun experimenting with it for different recipes.

    I love that you can use less oil and it's my go to tool for reheating fried foods.

    I wanted to incorporate acorn squash into our fall dinners. This recipe is so easy to make and the maple cinnamon glaze enhances the natural sweetness of the acorn squash.

    You can eat them as is or serve as a side dish with your favorite meals.

    Ingredients

    Air Fryer Acorn Squash Instructions

    1. Prepare the acorn squash by slicing it in half and scooping out the seeds and pulp. Lay the flat side of the squash down and slice ½ inch pieces.

    1. Air fry. Toss with canola oil then air fry at 400°F for 15 minutes, flipping halfway through.
    1. Make the glaze by combining melted butter, brown sugar, maple syrup, cinnamon and salt.

    1. Coat the squash with the glaze and top with pecans.

    Tasty Tips

    • Work in batches depending on the size of your air fryer. I have a 4 quart air fryer and did two batches.
    • Use a sharp knife and be careful when slicing as the acorn squash has a thick skin.

    Oven Method

    No air fryer? I got you covered! To make this in the oven, toss the acorn squash with oil and lay each piece flat on a large baking sheet lined with parchment paper. Roast for 10-15 minutes, flipping halfway through, until tender.

    Then toss the squash in the maple butter cinnamon glaze.

    • 1 acorn squash about 2 pounds
