    Homemade Pork Breakfast Sausage Patties

    Juicy pork breakfast sausage patties packed with flavor. This homemade version is made with pantry staple ingredients and tastes so much better than store bought breakfast sausage. It's super easy to make and can be cooked from frozen for a quick and hearty morning breakfast!

    The Inspiration

    I love making breakfast sandwiches and breakfast burritos with pork sausage and used to get them at the grocery store. As prices have gone up for most groceries, I have tried to make things myself to save a few dollars. A one pound roll of our favorite sausage is about $6 versus I can get pork butt for less than $1.50 per pound when it's on major sale.

    Of course, there's a lot of more work involved, like grinding the pork, but at least I know what's going in it.

    You can also buy ground pork to make breakfast sausages a breeze. Just mix it with seasonings and spices.

    Ground pork at my local grocery store is $2 per pound right now. Whether you're grinding your own pork or buying it preround, you're still saving a ton of money and you know exactly what's going in your sausage, meaning no fillers or preservatives.

    I promise you, once you make your own breakfast sausage, it will be hard to go back to store bought sausage. Homemade breakfast sausage just tastes so much fresher and flavorful.

    I couldn't believe the difference until I made them myself.

    Homemade Pork Breakfast Sausage Patties Ingredients

    • Ground pork- pork is classic for breakfast sausage.
    • Brown sugar- maple syrup can be substituted. A hint of sweetness to balance out the savoriness of the sausage.
    • Garlic powder- or use two cloves of fresh minced garlic.
    • Paprika- smoked paprika would be even better.
    • Poultry seasoning- consists of thyme, sage, marjoram, rosemary, black pepper, and nutmeg.
    • Dried sage- you can substitute about 2 teaspoons finely chopped fresh sage.
    • Dried thyme- you can substitute about 2 teaspoons finely chopped fresh thyme.
    • Crushed red pepper flakes- you can use cayenne pepper or your favorite hot sauce instead. Adjust to taste.
    • Salt & black pepper- to make low sodium breakfast sausage, use ½ or ¼ teaspoon of salt.

    How to Make Pork Breakfast Sausage Patties

    1. Add the sausage and seasonings to a bowl.
    2. Mix everything together. Optional: Cover and refrigerate for 2 hours or overnight.
    1. Form the sausage into 6 patties.
    2. Cook the breakfast sausage patties.

    How to Form Sausage Patties

    Form the sausage into 6 balls then flatten each into patties by pressing them in between your palms.

    Alternatively, line a baking sheet with parchment paper and press the sausage ball into the sheet.

    I used a ¼ cup measuring cup to portion out 9 patties. You can make them as big or as small as you'd like.

    Tasty Tips

    • Use ground chicken, turkey, or beef! Just make sure there is at least 20 % fat to keep it juicy and flavorful! You can even use a vegetarian alternative.
    • Experiment with your favorite spices and seasonings! Try fennel seeds, basil, oregano, or cloves.
    • Mix the sausage with your hands. I've found that this is the best way to ensure all the spices get distributed throughout the sausage. Wear cooking gloves so you don't have to touch the meat directly.
    • Let the flavors marry! These are delicious when cooked right away, but even better when the spices have had a chance to mingle with the pork for a few hours.
    • Form them into whatever shape you'd like! Make it fun for kids by forming the patties into fun shapes or crumble the sausage and use it in your favorite recipe like this crescent ring or frittata!
    • Make a large batch and freeze the sausage for easy and quick breakfasts! This recipe can easily be doubled or tripled and the patties can be cooked directly from frozen.

    How to Freeze Uncooked or Cooked Breakfast Sausage Patties

    Line a baking sheet with parchment paper or a silicone mat. Place the raw or cooked sausage patties (make sure it is completely cooled) on the sheet in a single layer and freeze.

    Once frozen, place the patties into a freezer bag.

    To freeze one pound of breakfast sausage instead of individual patties, place the sausage in a freezer bag and flatten the sausage out to fit the entire bag.

    This will allow the sausage to defrost very quickly.

    Personally, I prefer to freeze uncooked breakfast sausage and cook it as needed to ensure it tastes as fresh as possible, as reheating can dry out the sausage.

    The sausage is fully reheated when it reaches 165°F.

    Heat a nonstick skillet on medium heat and place the frozen sausage patties in the pan. Cover the pan and let it cook for 3-4 minutes on each side or until cooked through. The lid helps to trap the steam and allow the sausage to defrost. During the last couple of minutes of cooking, remove the lid and increase the heat to medium high to brown the sausage.
