    Sheet Pan Sausage and Veggies

    The easiest sheet pan dinner loaded with smoked sausage and tons of vegetables. Full of flavor and a spicy kick.

    • It's full of flavor- the savory sausage pairs really well with the sweet and nutty butternut squash. The garlic and spices bring the dish together.

    Ingredients

    Sheet Pan Sausage & Veggies Instructions

    1. Preheat the oven to 400°F. Line a sheet pan with parchment paper then add the sausage and veggies. The parchment paper makes for an easy breezy clean up!

    1. Mix the seasonings in a bowl. It's going to look a little weird and the oil is not going to fully incorporate but just trust the process!
    1. Distribute the seasoning evenly on the vegetables and use your hands to coat.

    1. Roast for 15 minutes then toss and bake for another 15-20 minutes until the vegetables are cooked through. That's it!!! Enjoy this super easy dinner.

    Tasty Tips

    • Flip everything halfway through roasting for even cooking and browning.
    • Chop the vegetables about the same size for even cooking. I did half inch cubes.
    • Use your favorite sausage. I used smoked beef sausage but you can also use Italian sausage, kielbasa, or plant based alternatives.
    • Use your favorite veggies. Acorn squash, carrots, brussels sprouts, zucchini, onions, asparagus, and bell peppers are all yummy. Use your favorites or what you have on hand. This recipe is versatile!

    I like to eat this as is since it's loaded with protein, vegetables and carbs from the potato. Sometimes, I like to eat it with steamed white rice.

    How do I store leftovers?

    Store leftovers in the fridge for up to 4 days. I love making a double batch so I have leftovers. This is a great meal prep recipe!

    How do I reheat sheet pan sausage and veggies?

    I reheat in the microwave for 2-3 minutes but you can also reheat in the oven.

    Ingredients
      

    • 14 ounces smoked sausage 1 inch slices
    • 2 cups butternut squash cubed
    • 2 medium potatoes cubed
    • 2 cups broccoli florets

    Seasonings

    • 2 tablespoons vegetable oil
    • 3 cloves garlic minced
    • 1 tablespoon dijon mustard
    • 1 teaspoon paprika
    • ½ teaspoon onion powder
    • ½ teaspoon red pepper flakes
    • salt and pepper to taste
