Smashburger inspired rosemary garlic fries with olive oil. Super fragrant and double fried for ultimate crispiness. The perfect side to a juicy burger or as an appetizer.

    Why You'll Love this Recipe

    • It's super crispy. Thanks to double frying.
    • It's garlicky. There's never enough garlic in my book.
    • It's fragrant. The rosemary and extra virgin olive oil take these fries to the next level.

    Ingredients

Starchy potatoes like russet or Idaho potatoes are best for French fries.

You can substitute fresh garlic with ½ teaspoon of garlic powder.

How to Make Rosemary Garlic Fries

    1. Heat 1 inch of oil to 375°F. I typically shallow fry but if you have a deep fryer, use that!

    1. Fry the potatoes in batches for 5 minutes then drain on a wire rack.
    1. To double fry, heat the oil to 400°F and fry for 2-3 more minutes until golden brown. Drain the fries on a wire rack.

    1. In a large bowl, mix rosemary, garlic, olive oil, and salt. Toss the fries in to coat.

    Tasty Tips

    • Fry in batches so the temperature of the oil doesn't drop too low. Overcrowding will result in soggy fries.
    • Double fry for crispiness. During the first fry, the moisture in the fries moves to the outside layer. Frying again at a higher temperature dries out the exterior for a crispier crust.
    • Drain the fries on a wire rack. This allows the oils to drain through and air to flow so the fries stay crispy.

    FAQs

Can I use frozen French fries?

Yes, you can definitely use frozen French fries for this recipe. Follow the instructions on the package then toss in the seasonings.

Can I make rosemary garlic fries in the air fryer?

Yes, you can make these in the air fryer instead of frying in oil. To make these in the air fryer, toss the potatoes in 2 tablespoons of canola oil and cook the fries at 375°F for 10 minutes or until golden brown. Flip halfway through. The texture will not be as crispy as deep frying in oil. Toss the fries in the seasoning and enjoy!

How do I store leftover rosemary garlic fries?

I would be surprised if you have any leftovers! These can be stored in the fridge for up to 3 days.

How do I reheat leftover rosemary garlic fries?

Reheat at 400°F for 5 minutes, flipping halfway through.
